These meringue-like cookies are placed in a preheated oven, which is immediately turned off and they hake overnight as the oven cools down. An easy and fun way to concoct a batch of sweets — ideal in the summer, and fancy enough for Christmas.
2 egg whites, at room temperature
3/4 cup sugar
1 package (6 ounces) chocolate chips
A drop or two of green food coloring (optional)
4 drops mint extract (about 1/4 teaspoon)
Preheat oven to 375 degrees F. Beat egg whites until stiff, adding sugar gradually. Fold in chocolate chips, coloring, and mint extract. Drop by teaspoonfuls on a ungreased cookie sheet, using an upward twist of the spoon to form peaks. Place in preheated oven and turn oven off immediately. Leave in oven with door closed overnight – and enjoy the cookies the next morning!
