We just love these. Once I served these for my children’s sleepover, they quickly became the standard and most requested sleepover dinner from that point on. They are actually very filling, and very simple to make.
8 slices sandwich bread
2-3 eggs, beaten
1/8-1/4 cup milk
Oil (vegetable, olive, or sunflower)
Turkey and ham, thin slices, equal amounts
1 large very ripe tomato, sliced thin
mayonnaise
Heat a little oil in a large skillet on medium heat, meanwhile, in a separate dish, combine beaten eggs with the milk.
For each sandwich, lightly dip 2 slices bread in the egg mixture and place them in hot skillet. Lightly brown one side, then turn them over.
Immediately after turning, assemble the sandwich in the skillet. Place a slice of cheese with equal amounts of ham and turkey on one slice of bread; top with the other slice. All sides of the bread need to be browned.
5Flip sandwich in skillet until the cheese melts. Remove from skillet; add a few slices of cold tomato, and spread some mayonnaise on the ‘uncheesy’ side of the sandwich. Slice in half.
My comments: These taste best right out of the pan … with warm melted cheese on one side/cold tomato and mayonnaise on the other. Yumm! Some of our favorite sides with these sandwiches include tater tots or fries, and a dish of cottage cheese w/fruit, or some applesauce.
