Sue Jones, who has been an exhibitor at the Ozark Empire Fair for 18 years, says, “Two times I’ve entered this recipe in the Hammons Black Walnut Cooking Contest at the fair, and each time I’ve won the blue ribbon!”
Preheat the oven to 400 degrees F. In a medium-size bowl, combine the eggs, sugar, flour, corn syrup, butter, and vanilla. Blend well. Line a 9-inch pie plate with the pastry. Pour the filling into the crust. Arrange the walnuts on top. Bake in the lower third of the oven for 15 minutes. Reduce the oven temperature to 350 degrees F and bake for 35 to 40 minutes more, or until the center appears set. Cool completely before serving.
