1 lime zested and juiced
1/2 cup caesar salad dressing
1/2 tsp cayenne pepper
1 head romaine lettuce, rinsed and torn
1 pint cherry tomatoes, stems removed
1 cup whole black olives, pitted
1 can (15 oz) whole kernel corn, drained
1/4 cup grated parmesan cheese
1 avocado, pitted, peeled and diced
2 cups tortilla chips, crushed slightly
In large bowl combine zest and juice with caesar dressing and cayenne pepper, mix well.
Add lettuce and toss with salad dressing. Add tomatoes, olives and corn. Sprinkle with parmesan cheese and toss again. Divide into individual plates and top with avocado and tortilla chips.
