This dish was served on Thanksgiving. My mother made it with soda crackers, but I prefer Ritz crackers.
4 large onions
1/2-1 teaspoon salt
1/8 teaspoon pepper
1 package Ritz, soda or saltine crackers
1/4 cup butter or margarine
milk
Peel and quarter onions. In large saucepan, cook onions, salt and pepper. Cover with water. Boil until onions are translucent, remove from heat and allow to cool. In a 2 quart deep casserole dish add cooled onions and their liquid. Crush enough crackers to mix with onion mixture until moist but not too dry. If it appears to be too dry add milk until it has reached the right consistency. Dot with butter and bake, uncovered, in 350 degree oven for 45 to 60 minutes or until golden brown.
