Meat Sauce

Sure you can buy good meat sauce. But homemade is better — and less expensive.

Yield

Makes 1 quart.

Ingredients

3 tablespoons olive oil
1 cup onion, chopped
1/2 cup celery, chopped
1 clove garlic, minced
1/2 pound ground beef
1/2 pound bulk pork sausage
1 teaspoon salt
1/8 teaspoon black pepper
1/2 cup tomato juice
1/4 teaspoon dry red pepper
3 ounces tomato paste
2 cups canned tomatoes
1/4 teaspoon oregano
1/4 teaspoon basil

Instructions

Sauté the onion celery and garlic in olive oil for about 5 minutes. Remove the vegetables and brown the beef and sausage meat in the remaining oil. Combine the meat and vegetables in a 3-quart saucepan, add remaining in-gredients, and simmer for 1-1/2 hours. Serve over cooked spaghetti. This meat sauce goes well with lasagna.
