This is especially good as a salad combined with fresh, raw spinach and croutons.
2 garlic cloves, minced
1/2 teaspoon salt
1/4 teaspoon black pepper
1/4 teaspoon finely grated lemon peel
1/4 cup fresh lemon juice
3/4 cup salad oil
1 tablespoon chopped parsley
1/4 cup grated Parmesan cheese
1/2 pound fresh, whole green beans
2 cups sliced mushrooms
1 tablespoon sliced scallions
Combine first 8 ingredients and mix well. Steam green beans until tender but not soft, then plunge into cold water. Mix beans with sliced mushrooms and scallions. Pour dressing over vegetables and allow to marinate about 2 hours.
