Maple Syrup Pralines

Very sweet candies for a special treat.

Yield

Makes 1-1/2-2 dozen.

Ingredients

2 cups powdered sugar
1 cup dark maple syrup
1/2 cup cream
1 teaspoon vanilla
1/2 teaspoon lemon extract
1 cup pecans or cashews, coarsely chopped

Instructions

Bring sugar, syrup, and cream to a boil and continue boiling until mixture reaches 240 degrees F on a candy thermometer (or until a bit of syrup dropped into cold water forms a medium-firm ball). Remove from heat, let mixture cool slightly, and beat with a wooden spoon until creamy. Add flavorings and beat again until well blended. Stir in nuts. Drop by spoonfuls onto waxed paper and allow to set before removing.

  1. I just made Maple Pralines following the recipe in Fanny Farmer cookbook.
    I used one cup of large pieces of walnuts, but needed two as the recipe suggests.
    The ingredients are costly: heavy cream, maple syrup, walnuts.
    Next time I have a cup of maple syrup I will try again using two cups of walnuts
    and might add a little salt then as well.
