Maple Syrup Cookies

Yield

Makes about 3 dozen.

Ingredients

1-1/2 cups maple syrup
1/2 cup white sugar
1/2 cup (1 stick) butter or margarine
1 teaspoon baking soda dissolved in 1 tablespoon water
1 cup rolled oats
1/2 teaspoon salt
2 cups flour, approximate

Instructions

Heat maple syrup, sugar, and butter or margarine until just short of boiling. Remove from stove and add baking soda and water. Let cool, then add oats, salt, and enough flour to roll out. Roll to about 1/4 inch thick and cut with a cookie cutter. Bake at 375 degrees F for about 8 minutes, until lightly browned.

  1. The women in my family got together to make Christmas Cookies. I let it chill and mixed it together. I had to use double the flour trying to make it roll worthy and it still didn’t work. We made it into a bar instead and baked it and it came out tasting very flourey and oatey.
