With maple syrup, pecans, and sour cream, these are bran muffins with a difference! The syrup adds a distinctively sweet flavor. The muffins are at their best served warm from the oven, so a pat of butter can melt in.
1 egg
1/2 cup sour cream
1/2 cup maple syrup
3/4 cup all-purpose white flour
1 teaspoon baking soda
1-1/4 cups branflakes
1/4 cup raisins
1/4 cup chopped pecans
Preheat the oven to 350 degrees F. Grease 12 muffin cups or line with paper.
In a large mixing bowl, beat the egg. Add the sour cream and maple syrup and beat to combine. Set aside. In another bowl, sift the flour with the soda. Add to the egg mixture along with the branflakes and stir just to moisten. The batter will be lumpy. Stir in the raisins and nuts. Spoon into the prepared muffin cups and bake for 20 minutes. Serve hot.
