1-1/2 cups all-purpose flour
1/2 teaspoon baking soda
1/4 teaspoon salt
1 cup (2 sticks) unsalted butter, softened
3/4 cup plus 2 tablespoons packed dark-brown sugar
1 large egg
1 teaspoon pure vanilla extract
1/2 teaspoon maple extract
2 cups (8 ounces) chopped pecans
Adjust rack to lower third of oven and preheat oven to 350 degrees F. Line a large cookie sheet with baking parchment. In a bowl, whisk or stir with a rubber spatula the flour, baking soda, and salt just to combine; set aside. Using an electric mixer, cream the butter with the brown sugar until mixture is creamy. Mix in the egg and extracts. Stir in the flour mixture, then the nuts.
Drop dough by level measuring tablespoonfuls about 1-1/2 inches apart onto the baking sheet. Bake for about 9 minutes, or until cookies are light brown on the bottom and no longer shiny on top.
