As many New Englanders will tell you, the simpler a lobster stew is, the better it tastes.

1 onion, peeled and chopped
2 cups milk
2 cups cream
1 cup cooked lobster meat chunks
2 tablespoons sherry, or more to taste
Salt and pepper to taste
