lincoln ginger biscuits

Ingredients

8oz plain organic flour
2tsp ground ginger
8oz soft organic brown sugar
4oz organic butter
1 large organic egg
1 level tsp bicarbonate of soda
1tbs of organic milk
organic almond halves

Instructions

Put the flour, ginger and sugar into a mixing bowl and rub the butter

into them. Dissolve the bicarbonate of soda in the milk and beat the

egg into the mixture. Add the liquid to the dry mixture and mix well

using one hand until a dough is formed. Flour your hands and roll the

dough into balls. Place balls onto a greased baking tray and press

each one down once. Place an almond half on each biscuit and bake at

160 degrees centigrade for 30 minutes.

  1. These cookies are crispy, richly flavored, and delicious. At first, I thought baking them for 30 minutes must be a mistake, but no, they need to be baked for 30 minutes to achieve full flavor and crispness. (I baked a few cookies for 15 minutes and they lacked the depth of flavor and had soft centers that did not suit this English style biscuit .)
