Even diehard lima bean haters may succumb to this chowder.
1/4 pound salt pork
1 onion, peeled and chopped
4 cups chicken stock
3 potatoes, peeled and chopped
1-1/2 cups sliced mushrooms
2 cups fresh lima beans
2 cloves garlic, minced
2 teaspoons chopped parsley
2 cups cream
1 to 2 tablespoons butter
Salt and pepper to taste
Fry salt pork in soup kettle until crisp. Remove with slotted spoon and set aside. Sauté onion in fat until tender. Add stock, potatoes, mushrooms, beans, garlic, and parsley. Simmer, partially covered, 30 minutes. Add cream and butter and heat thoroughly. Season with salt and pepper. Garnish with reserved salt pork.
