Lemony Coleslaw

* 1 head cabbage, shredded
* 2 scallions, chopped
* 2 carrots, peeled and shredded
* 2 ribs celery, chopped fine
* 1 cucumber, peeled, seeded, and chopped fine
* Juice of 2 lemons
* 1/4 cup olive oil
* 2 tablespoons mayonnaise
* Kosher or sea salt and freshly ground black pepper, to taste

Instructions

In a large bowl, combine all ingredients.
