Lemon Squares
So easy to make, with ingredients already in the cupboard, and always the first to disappear from any holiday gift assortment.

Ingredients
1 cup all-purpose white flour
1/4 cup confectioners’ sugar
1/2 cup (1 stick) butter or margarine
2 eggs
1 cup white sugar
1/4 teaspoon salt
1/2 teaspoon baking powder
2 tablespoons lemon juice
Confectioners’ sugar or coconut
Instructions
Preheat the oven to 350 degrees F.
Mix together the flour and 1/4 cup confectioners’ sugar. Cut in the butter until the mixture has the consistency of cornmeal. Press the mixture evenly on the bottom of an ungreased 9-inch square pan. Bake for 20 minutes.
Meanwhile, beat the eggs, white sugar, salt, baking powder, and lemon juice together until light and fluffy. Pour over the hot, partially baked crust. Return to the oven and bake for 25 minutes. Cool completely. Dust with confectioners’ sugar or coconut. Cut into squares.




I would add more lemon juice, and reduce the final cooking time; they were a little bit over done. I was also consider doubling the filler for the recipe; there didnt seem to be enough filling.
