A classic old favorite.
2-1/4 cups old-fashioned oatmeal
2-1/4 cups light brown sugar
3 tablespoons flour
1/2 teaspoon salt
1/2 pound butter, melted
1 egg, beaten
1/2 teaspoon vanilla
3 tablespoons flour
Combine the oatmeal, sugar, flour, and salt and stir. Add the egg, melted butter, and vanilla. Drop, spacing well apart, by teaspoonfuls on well greased and floured cookie sheets. Bake for 12 minutes in a 325 degree F oven. Use a spatula or a pancake turner to remove from sheet.
