KING RANCH CHICKEN
1 lb chicken breast, cooked and diced
1 lb velveeta cheese, cubed
1 cup sour cream
1 can cream of chicken soup
1 can diced tomatoes and chilies
1 cup diced bell pepper
1/2 cup diced onion
2 cloves garlic, minced
1 tbsp oil
1 oz package tortilla chips
Combine sour cream, soup, tomatoes/chilies in a large bowl, add a bit of
milk to make creamy if necessary.
Saute’ pepper, onion and garlic in the oil until tender.
Add to sour cream mixture.
Put a layer of tortilla chips in bottom of casserole dish, follow with
chicken and cheese, cover with sour cream mixture, repeat until all used.
Cover and bake at 350 degrees for 30 minutes or until cheese is melted and
everything is heated through.
