I have been having GREAT difficulty getting Andrzej (15mos) to eat much of
anything, I have used all ideas I have ever gotten here, and then some. My
sister (who has a 5 yo as I do also) sent me the following ideas and thouht
someone here might like to see…..to use for whatever age kid you might
find these appropriate for 🙂
Cooked chicken strips
1. use as dippers for salsa, ketchup, ranch dressing, soy sauce,
honeymustard, etc… add carrot sticks and celery sticks for additional
dippers
2. place in pita with humus or prepared spinach dip and lettuce. Add
some shredded carrots.
Peanut butter
1. Layer creamy peanut butter on a flour tortilla with jelly and roll
up wrap or jellyroll style. Slice crosswise into pieces.
2. Use peanut butter to make an asian-style salad dressing (2 TBS
creamy peanut butter, 1 small clove chopped garlic, 1/2 tsp grated ginger
root, 1/2 tsp lemon juice, 1/2 tsp soy sauce, 1/2 tsp honey, 1/4 tsp
tumeric, hot pepper sauce and fresh-ground pepper to taste. Add this
mixture to about 1/2 cup of water. Toss 1/4 cup plus 2 TBS of this dressing
with 2 cups grated cabbage (or any prepared “slaw” mixture you find in the
produce department). Add a touch of cilantro
Cheese
1. Send cheese sticks and bread sticks. Or a prepared cheese spread
with bread sticks and an apple.
Carrot Salad
1. 2 cups grated carrots, 1.5 ounce package of raisins, an 8 oz. canned
of pineapple tidbits, and 1/4 cup light mayo.
Rice
1. Turn leftover rice into fried rice and place in an insulated
container to keep warm or make it ahead and eat it chilled.
2. Pour black bean soup over the top of leftover rice.
Ravioli or Tortellini
1. Cook the night before, drain and refrigerate overnight. Send with a
container of marina sauce for dipping at room temp.
Frozen Waffles
1. Heat waffles, spread with peanut butter and cut into bite-sized
pieces or sticks. Send with syrup for room temp eating. OR make a pb&j
sandwich using the waffles instead of bread.
Dried Fruit
1. Sandwich cream cheese between two halves of a dried apricot or
peach. Roll edge in chopped nuts or sunflower seeds.
2. Use a food processor to chop fruit. Add cream cheese. Use as a
spread for nut bread, bimini or Hawaiian bread or waffles.
Cheesy Mexican Pizza
16 oz Boboli Pizza crust
1 cup refried beans
1/2 cup sour cream
1/4 cup black bean dip
1 (14 1/2 oz) can diced tomatoes – WELL drained
2 cups (8 oz) shredded cheddar cheese
1 cup (4 oz) shredded pepper jack cheese
Bake at 450 for 10
