Ingredients

1. Preheat the oven to 350 degrees F. and butter and flour a 9- by 2-inch round cake pan.
2. Mix together 1 3/4 cups flour, 3/4 cup unsweetened cocoa powder, 1 cup sugar, 1 teaspoon baking soda, and 1/4 teaspoon salt.
3. To these ingredients add 1 cup buttermilk, 1/2 cup vegetable oil or melted butter, and 2 teaspoons vanilla. Mix.
4. Turn the batter into the pan, bake the cake in the middle of the oven for 30 minutes, or until a tester comes out clean, and let it cool for 5 minutes before turning it out of the pan.

Cocoa Cream Cheese Filling

1 cup sifted powdered (confectioner’s, icing) sugar
1 3-ounce package cream cheese
1/4 teaspoon vanilla
Milk
2 tablespoons unsweetened cocoa powder
1/2 cup sifted powdered sugar

Instructions

In a small mixwer bowl beat together the 1 cup powdered sugar and

cream cheese till fluffy. Beat in the vanilla. If necessary, beat

in enough milk (about 2 teaspoons) to make of pouring consistency.

Reserve 1/4 cup of the mixture and set aside to decorate the top of

the cake. Stir the cooa powder into the remaining mixture in the

bowl. Add the 1/3 cup powdered sugar and beat till smooth. Use the

cocoa mixture to spread between cake layers. Makes 2/3 cup filling;

1/4 cup icing.
