Hunting Camp Banana Bread

I make this bread for my husband to take into hunting camp every year. The guys eat a loaf every weekend during the season. It’s great with peanut butter for breakfast.

About 12 servings

Ingredients

1 1/2 cups sugar
1/2 cup softened butter
3 ripe bananas, mashed
2 eggs
2 cups flour
1/2 teaspoon baking soda
1/3 cup fat-free milk
1/4 teaspoon salt
1 teaspoon banana extract

Instructions

Preheat oven to 350 degrees. Lightly coat an 8×4-inch loaf pan with cooking spray.

Combine all ingredients in a large mixing bowl and beat well. Pour the mixure into the loaf pan.

Bake for about an hour. Place loaf pan on a cooling rack for 10 minutes, then remove bread from pan and finish cooling on the rack.
