A healthy breakfast cereal that gets the day off to a good start.
Boiling water
1 cup raisins
3/4 cup creamy peanut butter or safflower butter
2/3 cup honey
1 teaspoon cinnamon
Dash of cloves
1 teaspoon vanilla
4 cups rolled oats
1/2 cup wheat germ
1/2 cup cut up dried figs or dates
1 cup shelled peanuts, sunflower seeds, or favorite unsalted nuts
Pour boiling water over raisins to cover and let stand for 10 minutes. Drain. In a saucepan, combine peanut or safflower butter, honey, cinnamon, and cloves, and heat through. Remove from heat and stir in vanilla. Place oats in a large shallow roasting pan and pour warm peanut butter mixture over the oats. Stir gently until mixture is coated, then spread evenly in the pan. Bake in a slow oven (300 degrees F) for 35 minutes, stirring occasionally. Turn off oven and stir in raisins, wheat germ, figs or dates, and nuts. Let granola dry in the oven for about 1-1/2 hours, stirring occasionally. Store in covered containers.
