Homemade Grapenut Ice Cream

My mother always made this when I was a child. I don’t know where she got the recipe. It still is most requested by my family for our summer get togethers.

Yield

One gallon

Ingredients

5 eggs
1 1/4 cups sugar (more or less to taste)
1 can Eagle Brand milk
1 small carton heavy cream
Milk
1 Tbsp.Mexican vanilla
1 1/2 cups grapenut cereal

Crushed Ice(1-2 bags)
1 box rock salt

Instructions

In large mixing bowl beat the eggs til lemon colored gradually adding the sugar. Pour in the whipping cream(do not whip) and the Eagle Brand milk. Mix well. Add vanilla flavoring and pour in enough milk to fill to top of mixing bowl.Pour slowly into a gallon ice cream freezer can.Sprinkle in the grapenuts.Secure lid.Use 2 parts crushed ice to 1 part salt until ice cream is frozen. I “pack” mine with more ice & salt when frozen but you can immediately serve it or put can in freezer till ready to serve.
