1 cup (2 sticks) unsalted butter – room temperature
1 cup packed brown sugar
1 large egg
1 tsp vanilla extract
2 2/3 cups AP flour
1 tsp baking powder
1/2 tsp salt
1/2 tsp ground nutmeg
beat butter and sugar in large bowl -until fluffy. beat in egg and vanilla. Sift flour, baking powder, salt and nutmeg – stir to blend well. Mix into moist mixture – incorporate – knead gently 1 minute. Shape dough into 1/2″ thick rectangle. Cut into 4 equal pieces; wrap in plastic and refrigerate up to one day or three hours. Let dough soften slightly at room temperature.
Position rack in center of oven – set temp. to 350deg. Butter large baking sheet.
Working with one section – roll out on lightly floured surface to 1/8″ thickness – lifting and turning dough often to prevent sticking. Use floured cutters. Cookies will not spread.
Bake 11 minutes or until light brown. Cool 5 minutes
