Hartwell Farm Pickup Pancakes

Using “a little of this and a little of that,” the Misses Fitch and Poor came up with this recipe for pickup pancakes, one of their favorites. Especially good served with fresh fruit.


4 to 6 servings


3/4 cup prepared waffle mix (any brand will do)
1/2 cup cornmeal
3/4 cup Bisquick
1 tablespoon butter
1 tablespoon sugar
1 teaspoon baking powder
1 egg
1/4 cup heavy crem
1-1/4 cups milk


Lightly grease a heavy frying pan or griddle and heat until a drop of water sizzles on the surface. In a medium mixing bowl combine all ingredients. Blend with a whisk or an electric beater just until smooth. Do not overmix.

Drop by spoonfuls onto the hot pan. Cook until bubbles form on the top, flip, and cook for 1 minute longer. Serve with butter and maple syrup.
