SECOND PRIZE of $3.00 goes to Mrs. Helen Mary Clyde, Savannah, Ga., for her recipe for Hamburger Barbecue.
2 cups sifted enriched flour
3 teaspoons baking powder
1/2 teaspoon salt
1/4 cup shortening
3/4 cup milk
Sift the flour and measure and resift with baking powder and salt. Cut in shortening with two knives or a pastry blender. When it is the consistency of coarse meal, stir in enough milk to dampen mixture. Knead gently on a floured board a few seconds and roll to 1/4-inch thickness. Cut with 3-1/2 inch cutter. Stack biscuits in pairs on baking sheet and bake in a 450 degree F oven from 12 to 15 minutes. Serve either shortcake style or as open-faced biscuits with hamburger sauce made of the following ingredients:
1 pound ground meat
1-1/2 cups chopped onion
1-1/2 cups chopped green pepper
1 10-1/2-ounce can condensed tomato soup
1-1/2 teaspoon salt
2 tablespoons vinegar
1 tablespoon mustard
1-1/2 teaspoons Worcestershire Sauce
Brown the meat in three tablespoons hot fat and add onion, stirring well. Add tomato soup, mixing well. Add remaining ingredients. Simmer over low heat for 30 minutes, stirring occasionally.
