This good old-fashioned ham loaf is an excellent way to make use of ham leftover from a holiday gathering.
4 cups cooked ham, finely ground
2 cups cooked rice
8 slices fresh bread, torn into small pieces
1 green or sweet red pepper, chopped
1 medium onion, chopped
2 teaspoons dry mustard
1 cup milk
3 eggs, lightly beaten
Preheat oven to 350°. Combine all ingredients as you would to make meat loaf, mixing well with your hands. Add more milk if mixture seems dry. Pat into 9×5-inch loaf pan and bake 1 hour. Serve with Spiced Fruit Sauce for Ham.
