The First Church of Christ, from which this recipe came, was founded in 1653 (just 33 years after the Pilgrims hit Plymouth Rock). It’s housed in the Bulfinch Church, which dates from 1816. This recipe isn’t quite that historic, but it is a time-honored one.
20 cups sifted all-purpose white flour
3 cups white sugar
6 tablespoons plus 2 teaspoons baking soda
20 eggs
5 quarts buttermilk (or sour milk)
1-1/4 cups (2-1/2 sticks) butter or margarine, melted
In a large bowl, combine the flour, sugar, and soda. Mix with a whisk to blend well.
In a large mixing bowl, beat the eggs. Add the buttermilk and melted butter and blend well. Add the dry ingredients and mix well.
Cook the pancakes on a lightly oiled griddle. Serve hot.
