1 lb round steak
1/4 cup soy sauce
1 clove garlic, minced
1/2 tsp ground ginger
1 cup green onion, thin sliced
1 red or green pepper thinly sliced
2 stalks celery, thinly sliced
1 tbsp cornstarch
1 cup water
2 tomatoes, cut in wedges
Trim fat from meat, cut beef across the grain in strips.
Combine soy sauce, garic and ginger. Add beef, toss and set aside while preparing vegetables.
Heat oil in skillet. Add beef and stir fry til brown. Cover and simmer meat 30 to 40 minutes low heat.
Turn heat up and add vegetables. Toss till the vegetables are tender crisp, about 10 minutes. Mix cornstarch with water. Add to pan. Stir and cook til thickened. Add tomatoes and heat through. Serve over hot cooked white rice.
