4 cups AP flour
1/2 cup finely chopped cystallized ginger
1 tbsp ground cinnamon
1 tsp ground ginger
1 tsp salt
1 tsp baking soda
1/2 tsp baking powder
1 cup (2 sticks) unsalted butter – room temp
2 cups packed brown sugar
2 tsp vanilla extract
1/2 tsp grated orange peel
2 large eggs
1/4 cup buttermilk

mix first 7 ingredients in medium bowl. Using electric mixer-beat butter in large bowl until light. Add sugar, vanilla, peel and beat ’til fluffy. Add eggs one at a time – mix after each. Beat in buttermilk. Beat dry ingredients into butter mixture just until blended. Divide dough into thirds. Flatten each piece, wrap in plastic and chill 1 hour. (can be made ahead-soften slightly at room temp, before rolling out).
Preheat oven to 350deg. Grease baking sheets. Roll out 1 dough piece on floured surface to 1/4″ thick. Cut out cookies – transfer to baking sheets. Bake until lightly browned – about 15 minutes.
