Fruktsoppa (Fruit Soup)
A Swedish dessert soup that’s easy to make and very good. Try serving it over vanilla ice cream, too.
Yield:
10 to 12 servings
Ingredients
1 box (8 ounces) dried apricots
1 box (6 ounces) seedless raisins
1 box (12 ounces) pitted prunes
4 to 5 apples, peeled, cored, and sliced in wedges
10 cups water
1 cup white sugar
1/4 cup quick-cooking tapioca
Cream or whipped topping
Instructions
In a large saucepan, combine the fruit and water. Bring to a boil and simmer for 30 minutes. Add the sugar and tapioca and simmer for another 15 minutes. Serve warm or cooled, with cream or whipped topping.




My class tried this recipe after searching the almanac for something different. Most of the class really were surprised to find that it was tasty.
