Elderberry Pandowdy

There’s actually nothing dowdy about this dish. It’s one of the very best.

Yield

6 to 8 servings


Filling:

Ingredients

3 cups elderberries
1/2 cup molasses or brown sugar
1/4 teaspoon nutmeg
1/4 teaspoon cinnamon
1/4 teaspoon salt
1 tablespoon lemon juice

Instructions

Preheat oven to 400°F.
Grease a 1-1/2 to 2-quart baking dish. Combine all filling ingredients in saucepan and cook, stirring over moderate heat for 10 minutes. Pour into baking dish.

Topping:

Ingredients

1-1/2 cups flour
2 teaspoons baking powder
1/2 teaspoon salt
1/2 cup white sugar
1 egg, well beaten
1/2 cup milk
1/2 cup shortening, melted

Instructions

Sift together dry ingredients. Combine egg, milk, and shortening and stir gently into flour mixture. Spoon over hot elderberries. Bake 20 to 25 minutes, until top is brown and crusty. Serve hot with cold cream.
