Easy Italian Stuffed Peppers

In my family, we each have a great stuffed pepper recipe. This recipe is a simpler version of my Aunt’s stuffed pepper recipe. It’s not a hard recipe, but it sure is good.

Ingredients

6 large yellow or red peppers
1 pound cooked and crumbled sweet Italian sausage
3 cups cooked rice pilaf
1/2 cup soft breadcrumbs
1/2 medium onion, grated
3 tablespoons bottled Italian dressing
2 1/2 cups Italian tomato sauce, plus 3 tablespoons
olive oil spray or 2 tablespoons olive oil

Instructions

Preheat oven to 325 degrees.

Wash and hollow out peppers; dry insides.

In a bowl, mix rice pilaf with bread crumbs. Add Italian dressing and 3 tablespoons of the Italian tomato sauce; mix well.

Add sausage and grated onion to pilaf mixture. Mix again, and then stuff the peppers.

Spray a large pan with olive oil spray, or spread olive oil to coat. Pour 1/2 cup Italian tomato sauce over the oil.

Place peppers in the pan and pour remaining 2 cups of Italian tomato sauce over them.

Cover with aluminum foil and bake at 325 degrees for one hour.

Notes

Select yellow or red peppers as opposed to green bell peppers for sweeter flavor. And choose box rice pilaf for easy preparation.
