Easy, Delicious Filet of Sole.

I made this recipe while living on Saquish, MA. when the children would fish for flounder. It’s great with baked potatoes and a salad on the side.

Yield

6 servings

Ingredients

6 flounder filets (sole)
small am’t of your favorite bread stuffing
1 can condensed cream of shrimp soup
1 can of tiny shrimp (drained)
shredded parmasan cheese

Heat oven for 350 F.

Instructions

Lay filets out flat and add a little stuffing in the center of each.
Wrap them up and place in a casserole dish with flap end down close to each other.
Pour the condensed soup over all and sprinkle tiny shrimp over the top. Then top with desired amount of cheese, cover and bake for 30 min. at 350 F.
Should be bubbly when done.

Casserole can be put directly on the table. Use a spatula to turn each one out seperately and spoon sauce over it to serve.
