EASY CINNAMON STRIPS

My grandmother used to make these cookies when we were children.The walnuts and cinnamon taste great together.

Yield

3 1/2 dozen strips

Ingredients

1 cup butter or margarine (softened)
1 cup sugar
1 egg yolk
2 cups flour
1 teaspoon cinnamon
1 egg white
1 tablespoon water
1/2 cup finely chopped walnuts

Instructions

Preheat oven to 350?. Cream butter and sugar until light and fluffy. Add egg yolk to blend. Add flour and cinnamon. Mix until dough forms. Do not overmix. Lightly grease 15×10-inch jelly roll pan. Press dough into pan. Mix egg white and water until foamy. Brush over dough. Spread walnuts over entire surface. Bake 20-25 minutes, or until lightly golden. Cut into strips immediately and cool on wire rack. Enjoy!

  1. These are very good treats, but it is hard to spread the dough into the jelly roll pan. Next time I will try rolling out the dough first and placing it into the pan; then it would be easier to handle and to spread to the edges of the pan. Also, it would be helpful to remember to spread the chopped walnuts ALL THE WAY TO THE EDGES OF THE DOUGH before cooking. That would help avoid the edges all around that are nothing but the dough.
    We are thoroughly enjoying the cookies/strips and will make and share them again and again, I’m sure. Enjoy!
