Dottie’s Coconut-Lemon Bars

Very rich and tangy — delicious with or without raisins and walnuts. A special treat to pack in a lunch or enjoy as an afternoon snack.

Yield

Makes about 24 bars.

Ingredients

2 cups flour
1/2 cup butter or margarine
1/4 cup brown sugar; packed
3 eggs, well beaten
2 cups brown sugar; packed
1/2 teaspoon salt
1 cup finely shredded coconut
1/2 cup seedless raisins
1/2 cup chopped walnuts
2 tablespoons lemon juice
1 teaspoon grated lemon rind

Instructions

Mix together flour, butter, and 1/4 cup brown sugar. Press firmly into the bottom of a lightly greased 13×9-inch pan. Bake for 10 minutes at 350 degrees F. Cool. Mix together the eggs, 2 cups brown sugar, and salt. Stir in coconut, raisins, walnuts, lemon juice and rind. Spread evenly over the partially baked bottom layer. Bake for about 20 minutes at 350 degrees F. Top will be lightly browned. When cool, cut into bars. If desired, sprinkle with confectioners sugar before serving.
