Try to find the smallest, sweetest berries you can, and if you substitute frozen, just reduce the amount of flour by half.

I loved this recipe! I did not have fresh thyme on hand, so I left it out, but the rest was perfect! I will say, I’m not sure why you said to use a rimless baking sheet, because my galette slid off the baking sheet with the parchment paper when I went to remove it from the oven and I had to catch it before it all hit the oven door! But it was a big hit with my family and friends!
