Cucumber-Mint Salad Dressing

“A refreshing warm-weather dressing which is best when made in a food processor. Serve it over chilled romaine and cherry tomatoes.” –Longwood Inn, Marlboro, Vermont

Yield

Makes 4 cups

Ingredients

2 medium cucumbers
1/2 cup fresh mint leaves
1 large clove garlic
Juice of half a lemon
1/2 cup mayonnaise
2 cups sour cream
1/3 cup red-wine vinegar
Fresh black pepper

Instructions

Peel cucumbers, slice in half lengthwise, and scoop out seeds with a spoon. In processor puree mint leaves, garlic, cucumber, and lemon juice till very fine. In large bowl mix this together with mayonnaise, sour cream, and vinegar. Add a few twists of black pepper.
