1 bell pepper — chopped
6 cloves garlic — pressed
1 (14 oz.) can diced tomatoes — undrained

2 tablespoons olive oil
5 teaspoons cumin
2 teaspoons jalapeno chili – (deribbed and deseeded) finely chopped (OPTIONAL)
2 cups brown rice, cooked

Instructions

Mix all ingredients together in a crockpot (except tomatoes and rice). Cover and cook on high for 6 to 8 hours or until beans are tender and most of the liquid is absorbed.
