Cream of Mushroom Soup
Please do not use anything but fresh mushrooms and butter in this.

Ingredients
1 pound fresh mushrooms
1 small onion, chopped
4 tablespoons butter
1 cup chicken stock
4 tablespoons butter
3 tablespoons flour
2 cups milk or light cream
1/2 teaspoon salt
1/8 teaspoon pepper
1-1/2 cups sour cream

Just made it tonight with all the full fat ingredients. The taste and texture are perfect. I would love a lower fat version but am happy to eat less and enjoy the soup as the recipe is written.
