Yield
Makes 1 loaf.
Ingredients
1 cup sugar
2 tablespoons butter, softened
1 egg
2 cups all-purpose flour
1/2 teaspoon baking soda
1 teaspoon baking powder
1/2 teaspoon salt
1 cup chopped fresh cranberries
3/4 cup orange juice
1/2 cup chopped walnuts
Instructions
Cream the sugar and butter until smooth. Beat in the egg. Add the flour, baking soda, baking powder, salt, cranberries, orange juice, and nuts, and blend well.
Pour into a greased 9×5-inch loaf pan and bake in a preheated 350 degree oven until a toothpick inserted in the center comes out clean, about 50 minutes.




Am allergic to nuts–what, if anything, do you suggest as a replacement for walnuts? Thank you
How about sunflower or pumpkin seeds? You could really leave the nuts out completely,I think.
A good standby would be dried raisins.

Looks good but needs TWICE the amount of butter and eggs, and HALF the amount of juice.

How can I substitute frozen cranberries for fresh? Do I defrost them or just use them frozen?
It’s easier to cut in half when frozen. Let thaw and use in recipe. I’ve made this same recipe for years and it is a WINNER!
