Made with fresh cranberries and crunchy walnuts, this easy and flavorful cranberry walnut bread is the perfect holiday treat.

A moist, dense loaf that can be served with breakfast, lunch, or dinner or as a snack any time of day. — The Jefferson Inn, Jefferson, New Hampshire

Yield

Makes 1 loaf.

Ingredients

1 cup sugar
2 tablespoons butter, softened
1 egg
2 cups all-purpose flour
1/2 teaspoon baking soda
1 teaspoon baking powder
1/2 teaspoon salt
1 cup chopped fresh cranberries
3/4 cup orange juice
1/2 cup chopped walnuts

Instructions

Cream the sugar and butter until smooth. Beat in the egg. Add the flour, baking soda, baking powder, salt, cranberries, orange juice, and nuts, and blend well.

Pour into a greased 9×5-inch loaf pan and bake in a preheated 350 degree oven until a toothpick inserted in the center comes out clean, about 50 minutes.

  1. How can I substitute frozen cranberries for fresh? Do I defrost them or just use them frozen?

    1. It’s easier to cut in half when frozen. Let thaw and use in recipe. I’ve made this same recipe for years and it is a WINNER!
