Cowboy Stew

Quick and Easy Stew


Serves 8


1/4 stick margarine
1 onion, chopped
1 lb. lean ground beef
1 (15 1/4 oz.) can whole-kernel corn, drained
1 qt. tomato juice
2 C. cubed potatoes, cooked and drained
1 (15-oz.) can chili with beans


In a skillet, sauté onion in margarine or butter until tender. Add the ground beef and cook until meat is cooked well and no longer pink. Add the corn, tomato juice, cooked potatoes and chili. Simmer for 15 minutes and serve.
