This easy Butter-Vinegar Sauce recipe is especially nice served on asparagus, spinach, or Swiss chard.

“My mother always used this recipe for Butter-Vinegar Sauce. It is especially nice served on asparagus, spinach, or Swiss chard.” –Colby Hill Inn, Henniker, New Hampshire
4 tablespoons butter
1/4 cup flour
1/2 cup vinegar
1/4 cup sugar
1/4 cup water
Melt butter and slowly add flour, stirring constantly. Add vinegar, sugar, and water, bring to a boil, and simmer 10 minutes. More vinegar or water may be added if too thick.
