2 cups all-purpose flour
1 teaspoon baking soda
2 teaspoons baking powder
1 tablespoon brown sugar
1 teaspoon salt
1 teaspoon ground cinnamon
2 eggs, beaten
1-1/2 cups buttermilk
1/2 cup sour cream
1/4 cup butter or margarine, melted
1 large apple, peeled, cored, and grated
In a large bowl, mix together the flour, baking soda, baking powder, brown sugar, salt, and cinnamon. Mix the eggs, buttermilk, sour cream, and butter in a separate bowl and add to the flour mixture, stirring just until moistened. Fold in the apple.
Using 1/4 cup batter per pancake, pour onto a hot, lightly greased griddle. Cook, turning once, until golden brown.
