This was inspired by a little cafe back home in Louisville, KY. Just in time for family reunions and outdoor picnics! This is a very hearty and simple version of the standard chicken salad. Very flavor-filled.
1 cup mayonnaise
4 boneless/skinless chicken breasts
1/2 bunch red seedless grapes
pepper to taste
1/2 red onion
3 stalks celery, cut
Trim fat and boil chicken breasts until juices run clear.
Drain chicken and set aside to cool.
Dice chicken into about dime-sized pieces. Mix with 1 cup mayonnaise, you may add more mayonnaise if you desire.
Depending on size of grapes, cut in half or into fourths. Add pepper to taste.
Add red onion and celery, diced just a bit smaller than chicken pieces. They add a wonderful texture and flavor contrast to grapes.
