Christmas Lace Cookies

p.148 in Joanne Fluke’s book Plum Pudding..

Yield

2 1/2 cookies

Ingredients

1 1/2 c rolled oats, old fashioned
1/2 melted butter, 1 stick
1/4 c sugar
1 t baking powder
1 t flour
1/2 t salt
1 1/2 t vanilla
1 beaten egg
1/2 c chocolate chips

Instructions

Preheat oven to 350 degrees
Measure oats into medium-sized bowl, add melted butter, stir. In small bowl, combine sugar, baking powder, flour and salt. Mix well.
Add sugar mixture to the oatmeal mixture and blend thoroughly.
Mix in vanilla and beaten egg. Stir well.
Add chocolate chips and stir well.
Line cookie sheets with foil, shiny side up. Spray foil lightly with Pam.
Drop cookie dough by rounded teaspoons onto foil, leaving space for spreading. 6-8 per sheet. Bake at 350 degr. for 12 minutes. Let cool for 5 minutes. Pull the foil off the sheet and over to a waiting wire rack. Let cool completely. Carefully then peel cookies from foil.
May spread melted chocolate chips over the top.

  1. The cookies are delicious, but extremely delicate. They spread 2-3 inches and are flat, crispy and flaky, make sure you leave enough room between them for spreading and don’t remove them from the foil until they are completely cool. Also, be sure to use old fashioned oats, quick cooking will not work well.
