Chocolate Pudding

Kathy maintains she could live forever on a desert island on a diet of boiled shrimp and chocolate pudding — her favorite foods. The combination may not appeal to many palates, but this recipe for homemade chocolate pudding will.

Yield

Serves 8-10.

Ingredients

4 tablespoons butter
3 cups milk
7 tablespoons cocoa, preferably Droste
1/2 cup boiling water
1 cup sugar
1/4 cup cornstarch
1/4 teaspoon salt
1 egg, beaten
1 teaspoon vanilla

Instructions

Melt butter in a small pan, and set aside. In a separate pan, warm milk. Stir cocoa and boiling water together to make a paste, then mix in 3 tablespoons of melted butter. Combine sugar, cornstarch, and salt and add to the warm milk. Add the cocoa-butter mixture and the beaten egg. Cook over medium-low heat, stirring until thickened, 20 to 30 minutes. Don’t let mixture boil. Remove from heat and mix in remaining tablespoon of butter and the vanilla.

  1. I made this pudding using the Droste chocolate as recommended. This is the BEST chocolate pudding I’ve ever tasted. Its very rich and creamy. I will definitely be making a chocolate cream pie with this recipe. Thanks Yankee for publishing this.
