Cheese Crackers (Coconut Flour)

Yield

16 Crackers

Ingredients

1/2 cup almond flour (grind raw nuts in food processor – can use any nuts of choice)
2 eggs
1/4 cup butter, melted
1/4 tsp salt
3 cups sharp cheddar cheese, shredded
1/2 cup sifted coconut flour

Instructions

Blend together almond flour, eggs, butter, salt and cheese. Add coconut flour and knead the dough with your hands for 2-3 min. Form dough into 1 inch balls and place on ungreased cookie sheet. Flatten to a diameter of about 2 – 2 1/2 inches. bake at 400 for 15 min, makes 16 crackers. taste best straight out of the oven and slightly crisp. Leftovers can be reheated at 400 for ~4 min.
*Onion Cheese Crackers
add 1 tsp onion powder to dough

  1. Fifteen minutes at 400 degrees is far too hot for far too long. YOUR CRACKERS WILL BURN! I should have followed my instincts and checked after 10 minutes, but I set my timer and lost track of time. And because the ingredients aren’t exactly cheap, you will be out a lot of money, too.

    It’s probably a good recipe when it isn’t burned.
