A hearty, stick-to-the-ribs treat, this homemade pumpkin bread is moist and quite spicy. Serve with cream cheese. –Greenville Arms, Greenville, New York
1/2 cup oil
1-1/2 cups sugar
2 eggs
1 cup puréed pumpkin
1/4 teaspoon baking powder
1 teaspoon cinnamon
1 teaspoon nutmeg
1 teaspoon ground cloves
3/4 teaspoon salt
1 teaspoon baking soda
1-2/3 cups flour
1-1/2 cups chopped walnuts (optional)
1/2 cup water
Preheat oven to 350°F. Mix together the oil and sugar. Add the eggs, one at a time, and beat until smooth. Stir in the pumpkin. Combine the baking powder, spices, salt, baking soda, and flour. Add the nuts to the dry ingredients. (This will prevent the nuts from sinking to the bottom of the loaf.) Stir the dry ingredients into the pumpkin mixture alternately with the water to form a smooth batter. Pour into a greased and floured 9×5-inch loaf pan. Bake 1-1-1/2 hours or until a toothpick inserted in the center of the loaf comes out clean.
