Baked Eggs

Makes 1 serving.

Ingredients

Per serving:
1 tablespoon chopped fresh dill
1 tablespoon cubed cheddar
1 tablespoon diced ham
2 eggs
1 tablespoon sour cream
salt and pepper

Instructions

Preheat oven to 400 degrees F and lightly grease one 3-inch ramekin per serving. Add dill, cheese, and ham to ramekin, then break eggs over that. Add a dollop of sour cream, and sprinkle with salt and pepper. Place ramekin(s) in a baking pan, add water to the pan to cover half way up the side of the ramekin(s), and bake about 15 minutes. Serve immediately. The ingredients listed fill one ramekin for a single serving, but you can bake multiple ramekins at the same time.

  1. We’ve been married 57 years and have seven children. For years we’ve had whoever is available–now children and grandchildren–come to our house for a Christmas Eve light dinner before the kids open their gifts. This, expanded of course, is perfect. They’ve tried it and love it, as do we. Thank you.

  2. Very simple and delicious recipe. Have made with different herbs, cheeses, etc. to vary flavors. Also made for a light supper as well. Obviously now a staple within my recipe box.
